Recipe: Crock'o'Chili; Beef Stew

I made crock pot chili today, thanks again to
jethereal. Crock pots are so easy to use!
1.2 lbs beef
1 onion
1 green pepper
2 cans diced tomatoes
2 cans beans (any type)
1 tsp diced garlic
1 package chili flavoring mix
other seasonings to taste (I used black pepper, salt, more chili powder, red pepper, cumin, paprika, oregano, basil, cinnamon)
condiments and sides to taste (we used shredded cheddar, sour cream, challah bread; also consider nacho chips, hot dogs)
Chop onion. Brown beef in pan with onion, drain. Chop green pepper. Mix all ingredients in a crock pot on high 5-6 hours, or low 8-12 hours. Less is ok since the meat is already cooked. Beware, it will get spicer than it seems at start, so don't add extra spicy things until the end. Serve when you feel like it.
Serves 2 for dinner, plus ~4 leftover meals.
And while I'm at it, beef stew!
1.5 lbs stew meat (chopped into 1" cubes w/ fat removed if you're making it on your own)
2 potatoes, chopped into cubes
1-2 onions, diced
bunch o' baby carrots, chopped in 3
2 celery sticks, diced
spoonful of diced garlic
2 bay leaves
brown sauces (~1 tbs each Worcestershire sauce, basalmic vinegarette, soy sauce, terriyaki, whatever else you have around)
1-2 beef boullion cubes
other spices to taste (salt, black pepper, oregano, basil, sage, rosemary, etc.)
Chop and dump in pot on high 5-6 hours, or low 8-12 hours. Some recipes call for putting carrots and potatoes on the bottom, then beef, then everything else, but I don't know that it makes a difference.
Serves 2 for dinner, plus ~4 leftover meals. Nuke leftovers for 1:30, mix, and repeat - if you don't mix, it'll be cold in the center.
