Recipie: Jacket Potato(e)s

Jacket Potatoes are something that T$ and I discovered in London this summer, upon the recommendation of someone he knows. The concept is that the potato serves as a jacket for some kind of animal filling, in single-person portions. As such, there are two parts to any jacket potato.
Baked Potato
Do whatever you would normally do to bake a potato. I recommend wash a medium brown potato (large if you're a big eater) and poke holes in it with a fork. Stick it in a microwave for 5-20 minutes, depending on potato size. Cut it in half the long way, slice each side the long way, and stick a pad of butter on both sides. You can also cook the potato beforehand and reheat.
Filling
You can prepare the filling while the potato is baking, or you can have it prepared beforehand. We tried numerous different types of fillings. My favorite was a chicken salad with bacon and small squares of swiss cheese. The easiest to make at home is tuna salad. I wouldn't be surprised if they make crab or lobster salad filling. Basically anything animal that you can make a mayo-based salad out of works, and you can probably think of other things too. Below are my ingredients are for tuna salad, one person. Dump them all in a bowl and mix. Spices are to taste.
Combine

Dollop the something-salad atop/inside the sliced baked potato. Sprinkle on grated cheddar cheese. Stick the whole thing back in the nuker for another minute or so, until the cheese is melted. Eat hot.

- 1 medium stalk celery (chop smaller than 1 cm3)
- 3 spoonfuls Miracle Whip (or mayo)
- black pepper
- rosemary
- onion powder
- garlic salt
- oregano
