I forget if I've ever posted my spinach quiche recipe.
Ingredients
* Premade pie crust (of the rolled variety, only one sheet needed, thaw beforehand)
* 6 Jumbo eggs (8 Large)
* ~1 cup milk
* 0.5-1 package baby spinach
* 1 onion
* Chopped mushrooms (use the smaller amount of spinach if so)
* Spices to taste
* ~1 cup grated cheddar cheese (or other type of your preference)
Tools
* Fork or whisk for eggs
* Mixing bowl
* Colander or strainer to rinse stuff
* Sharp knif to cut stuff
* Cutting board
* Pie pan (I use pyrex, 9" diameter I think)
* Oven
Directions
Preheat oven to 400ºF. Rinse and drip dry any veggies. Chop onion and mushrooms. Mix together veggies and cheddar if you want, else mix while putting into pan. Whisk together the eggs, milk (start with 1/4-1/2 cup), spices. Line the pie pan with the single premade pie crust bottom. Sprinkle down some of the veggie mix, cheese, and pour on a bit of the egg mix. Repeat until you've used it all up. The spinach mix may mound up in the middle, up to an inch higher than the edges of the pie pan, but don't worry, it'll shrink a lot.
Put in the oven for 40 minutes, or until a butter knife or toothpick inserted into the comes out with just a little bit sticking to it, but not wet - just like if you were testing a cake. Optionally, let cool for a few minutes.
Eat. Serves 2 normal adults with leftovers, or 2 big eaters without leftovers.
